Question regarding anonymity
It's complicated. The more steps you take to obfuscate your transaction, the harder it will be for an adversary to track your coins. You can look into using something like the JoinMarket Wallet to keep your transaction more private.

Any easy ways to time lock Bitcoin?
If you want to play with OP_CHECKLOCKTIMEVERIFY, you can use the wallet in JoinMarket to create a fidelity bond. Be careful, though, because it's absolutely impossible to spend such a bond until its expiration.

Payjoin: Privacy Without Mixing
There are ways, have you seen teleports for example.

We need more developers working on Coinswap to negate Elizabeth Warren's AML act.
We need more developers than just u/belcher_ working on this at https://github.com/bitcoin-teleport/teleport-transactions. I hope Belcher gets better soon but regardless of his health status, this project is so important that many more developers should be working on it. If we can get coinswap transactions to look identical to regular transactions, then it would be very hard to stop anyone from gaining privacy. I'm hoping that Jameson Loop is right that "We can code harder and faster than the state can regulate."

Teleport: a CoinSwap implementation alpha release, provides invisible private transactions for bitcoin
As for reading, I haven't really written any docs yet (because I think all the ideas are the same as what already exists in LN), so the only thing to read is the code itself: https://github.com/bitcoin-teleport/teleport-transactions/blob/edbc4b7ae419cf463aebef57aaf956c67dc66b7f/src/watchtower_protocol.rs and https://github.com/bitcoin-teleport/teleport-transactions/blob/edbc4b7ae419cf463aebef57aaf956c67dc66b7f/src/watchtower_client.rs
