32 Keys or less; anyone proficient with them? Do you prefer this to boards with more keys? Which board(s) do you like?
I‘ve mained various 30 key boards for over a year now. I find it to be the optimal size to have all keys within easy reach, but without too much combo/layer jumping. You can see my config here: https://github.com/jcmkk3/zmk-config

Ergonomic Keyboards
I feel like any programmable keyboard should be able to be configured to work well with emacs. I personally like having very few keys so that my hands need to move less when typing/navigating. Because I use powerful firmware (ZMK), I still have access to all of the keys that I need. Are there any fully optimized layouts for 30 key layouts like the Hummingbird?
The Hummingbird page has a layout https://github.com/PJE66/hummingbird but I'm not a fan of combos - even if it's just for the lesser used keys.

My Bean KB
My still WIP splitkb. Reversible pcb, based on rp2040, hot swap and hidden diodes inside led switch space. Heavily inspired by the Humming Bird kb (https://github.com/PJE66/hummingbird) but I think that it has "too many" keys ;) so I just didn't use the two extra thumb keys.

No way! I was so convinced it was limited because of boards like the humminbird!

Recently I am thinking about getting one of Hummingbird-like ultra-minimal 30-key keyboards, for example, there is also Midge which uses a very similar design.
