There’s actually a special Raspberry Pi on the ISS called AstroPi and it was a collaboration between ESA and the Raspberry Pi Foundation.

Rpi alternatives
I do have a pretty good set of tools though. custom pios by guysoft is pretty slick. You give it a starting .img, it mounts it as a filesystem, it them emulates an arm system and runs the image on the builder machine. I write bash scripts to install the stuff I want on the image, and load any config files, etc. Then the filesystem is saved as a new img.

A little controller for my Home Assistant instance
It seems to really depend on the OS you install. I've had raspbian run horribly, some kioskOS's run ok, currently have a custom OS based on rasbian lite running and it's not too bad. Something like these: https://github.com/guysoft/CustomPiOS or https://github.com/TheLastProject/minimalKioskOS .
