I am aware of Inform 7, I think it is awesome. A few months ago I made a quick demo using Inklescript[1], which I found simpler and more suitable to my project (a Star Trek adventure). Inform 7 remains something I wish to explore in the future when I need something more complex.

About Text based games,basically
As others have said, Twine is really a great starting point for text or choice-based games. If you'd like to get into the weeds a little more, I'd also shout out Ink, which is incredibly flexible and really fun imo, altho it def requires a bit more coding experience.

Narrative Game Design
Otherwise, Inkle is also quite good. (and people have made players for it in Unreal and Unity, so it's not hard to attach to existing game projects.) I don't think it has the nifty visual flowchart though, if that's a piece you care about.

Are there any tools for designing the story of a dating sim?
I really like Ink. The developers made tons of games with it like the Sorcery! series, so it has a good foundation, and it's quite easy to write and organize, more than twine in my opinion.

I wanna get into producing
undertstand how to install VST (Virtual Studio Technology) download some free plugins. FREE ONES, NO matter if they sound superduper or not. just to play around and try to undertstand them. watch some tutorials how to set them up in your DAW. i recommend the Plugin Helm! yes not the best but for free and alot of options to learn from it. and thats what makes it great! https://tytel.org/helm/ . i recommend this heavily because you have some sounds to start witha and you can create alone with this one alot. i mean really alot. there are endless tutorials how to make some specific sounds with this. than you need to a drumkit. you can use helms drumsounds and so on. but i recommend to search for a better way to do drums. helm can give you good piano, bass, and so on. but take your time to find a drum plugin. after you played around with helm already.

Does anyone here have a suggestion for a really cool software synth (preferably free) that can do these kinds of things? I've been messing with Helm, Cardinal and the built-in synths in Bitwig Studio and have yet to get a satisfying result... Don't you hate it when that happens?
