I'm looking for a way to control a bunch of servo motors through homebridge
Before switching to HA, I always used MQTT-Thing for my Tasmota devices, but there are several HB plugins that don’t require an MQTT broker to work.

Home charger status chart, enjoying the MQTT integration from OpenEVSE. Curious why Volvo XC40 Recharge resumes charging at 0.4A for 10m a few times after it's done.
I'm not familiar with Homebridge, but it looks like there may be a Homebridge <=> MQTT bridge already.

Interact to Node-Red through Homebridge - any options?
For actually exposing the sensor to HomeKit, Homebridge is great. I’m a big fan of MQTT-Thing and have not yet found a replacement for all it can do; Home Assistant HomeKit support is good, but lacks many features of HB with MQTT-Thing. For this reason, I’d suggest you simply publish the “battery level” to the topic setup for the contact sensor in HB, add an apply function based on the low battery level, and you’re done.

Is it possible to create a dummy window covering switch to set multiple blinds to a specific position?
My approach would be to use MQTT-Thing to present a fake blind to HomeKit and Node-RED to translate/mirror the position state to your real blinds.

Which dummy contact sensor plugin are you using? I found https://github.com/arachnetech/homebridge-mqttthing and it looks like had to install mosquitto, which I did, but I don’t know what to add in MQTT settings/topics/etc.

Printing emails based on Message Filters, does not seem possible
All of my office devices are connected to Sonoff S31 smart plugs, flashed with Tasmota on their own locked-down VLAN, and can be controlled via voice, Alexa, Tasker automation on my Android, NFC tags at my office door and various scripts triggered via my StreamDeck (on Linux). This all works fantastic, and I can turn on or off my devices, including my printer, when I start or end my day at work.

The best alternative firmware example for true IOT devices is Tasmota [1]. Erase manufacturer firmware for every ESP devices the day after purchase to avoid those careless manufacturer firmwares.

Sonoff smart plugs
The ESP8266 based Sonoff S31 and ESP32 based Switchbot plugs, both flashed with either Tasmota or ESPHome, are my go-to options for US WiFi smart plugs with power monitoring.
