What is the simplest way to host a Socks5 proxy at my parents house?
Raspberry Pi is a very good option and you can certainly use docker on it. There are also many projects on github you can search for. I found https://github.com/snail007/goproxy but it could be overkill.

Advice to aggregate/load balance 2 to 4 Ethernet connections
I want all my (Ethernet) devices to be able to access the full 2Gb and not be stuck to 1Gb because of the box. The ISP’s box doesn’t support true link aggregation. Currently, my main computer have 2 Ethernet port directly connected to the box and I use dispro to load balance them locally and access the full 2Gbs. speedtest
