Why "Show Apps" is compact on big screen, but scaled better on laptop?
You can try the V-Shell extension which offers a more flexible algorithm that can use all available space and also offers custom grid dimensions and icon sizes. Currently, I recommend installing the latest version from GitHub.

How much or little do you prefer to customize Fedora (GNOME) via extensions?
I happily used vanilla GNOME in the past for many years. Unfortunately they've been making some questionable changes recently, and now I need to use extensions to undo those changes... Essential extensions for me are Panel Corners, and either Vertical Overview or V-Shell.

Thanks u/duartec3000 for recommending V-Shell -- love this setup!
Thanks for the feedback, could you (anyone) test the latest development version from the GitHub repository and let me know what you think? I've made some style changes to the search and app folder views, hopefully for the better...

Customize Gnome Shell behavior with V-Shell
While searching for a solution discovered the amazing V-Shell extension by GdH: https://github.com/G-dH/vertical-workspaces

Clean up app overview
My solution are "active folders" with up to 3x3 directly accessible icons without having to open the folder. Available in the V-Shell extension.

Is there a Gnome extension that can sort the apps in the launcher by the frequency of their usage?
V-Shell extension has the option, ignoring all folders. But It also offers active folder previews with up to 9 icons and up to 256px size, that allows better app grouping with direct access to the first 4 or 9 apps from each folder (with adaptive dialog size). You can even open all apps from a folder at once by dragging the folder on the workspace thumbnail. Now the folders finally make sense even to me :)

Please can you move the overview window title so it doesnt block the launcher icons? Maybe above the window icon?
If you want better control over the Shell UI, try my V-Shell extension, moving the title inside preview was the first thing I changed after switching to GNOME 40+.

Dock or Activities overview? The Vertical Workspaces extension has evolved into V-Shell and offers custom Shell even for fans of horizontally stacked workspaces! This is just an example of possible configuration.
Available on GitHub , the final version 24 will be available on e.g.o site soon.

Show more search results from Files?
V-Shell. The latest version in the repository allows you to customize the Shell whether you like horizontally or vertically stacked workspaces.
What are some alternatives?
adw-gtk3 - The theme from libadwaita ported to GTK-3

gnome-shell-extension-transparent-top-bar - GNOME Shell extension that brings back the transparent top bar when free-floating in GNOME Shell 3.32
custom-accent-colors - A GNOME Shell Extension that provides 7 Custom Accent Colors. The selected Accent Color can be applied to GTK4/GTK3 apps and the Gnome Shell.
mutter-rounded - A window manager for GNOME, with rounded corners patch
gnome-command-menu - A GNOME Shell Extension to manage shortcuts in Top Bar (Inspired by Shuttle and SSHMenu)
blur-my-shell - Extension that adds a blur look to different parts of the GNOME Shell, including the top panel, dash and overview

media-controls - A media indicator for the GNOME Shell.
panel-corners - A gnome-shell extension to keep the old topbar corners, which were removed for GNOME 42.
vertical-overview - Gnome has had vertically stacked workspaces for a long time. The Gnome 40 update unfortunately made the switch to a horizontal layout. A choice that many Gnome users disagree with. This extension completely replaces the new Gnome overview with something that resembles the old style.
gnome-static-background - A GNOME extension to keep the wallpaper in the overview, instead of the gray void
