Updated my Lisp-style language/REPL written in GDScript to Godot 4! It's also open source!
The main repo is here where the Godot 3.3 version is the most stable. You can try the Godot 3.3 version online on itch.io here. The linked github release is for the Godot 4 version.

What's the Godot way to structuring the communication with the GUI?
For some context, I'm an experienced (~10 years) programmer starting to dabble in game development. I'm learning to build various systems to gain experience and understanding, and recently I was interested in developing a dialogue system with an editor similar to what Dialogic provides.

- I'm trying to set up a custom player name to dialogic. I can't figure out what I'm doing wrong. Here is my set up and what it's doing.

Do you know when you play Undertale and one dialogue have 2 or more options to choose? How do i make that(Godot 3.5)?
Use something like Dialogic or (personal recommendation) Dialog Manager.

I used a Godot plugin called "Dialogic" to create it, still working on the themes and assets, so most changes made are cosmetic.

How to make a basic branching dialogue system?
There are two great dialogue systems available for Godot, Godot Dialogue Manager, which is geared more towards writing things in a script, and Dialogic with a nice user interface, that is more artist-friendly (though direct script editing is also available). It also has more features (at least in the new version, which is currently under development for the upcoming Godot 4 and might not be suitable for production).

For your second question, try looking at existing add-ons like Dialogic either for a ready to use implementation or as inspiration for how to code your own.
