For those looking to spin up a new validator, is allnodes the best "least effort" way to stake? Are there other alternatives?
No competitor but you can use https://stereum.net/ and rent a vps somewhere. With allnodes you give them your keys.

Wanting to stake, in need of answers to my concerns
There are different approaches, there are guides like https://someresat.medium.com/ and node management software like https://stereum.net/ (disclaimer: I'm with Stereum). Stereum also got video + pic/text guides so you get an impression on how it works. Also, try with testnet first, regardless what guide/software you're about to use!

Unfortunately yes, because there are many linux distributions, windows, macos, different ways to install JDKs, different JDK licensing, etc. I'd suggest to follow a guide like https://someresat.medium.com/guide-to-staking-on-ethereum-ubuntu-teku-f09ecd9ef2ee or use software that takes care of everything like https://stereum.net/
