First time player (and not a purist): Gameplay Overhaul mod or no?
There's also a great pre-configured modlist using EGO called Enderal My Way which is available through Wabbajack. It looks like a lot, but all you'll need to do is get the tool set up and it takes care of the rest.

Best Enderal SE compatible mods?
You might want to check out some mods on this list. Even if you don't go through a fully install with Wabbajack it's still a list designed for Enderal SE so you might find a few worth getting in there.

Would you recommend Enderal My Way for a first-time player?
Enderal My Way is built around the mod "Enderal Gameplay Overhaul" which makes significant changes to Enderal's gameplay. This is the main part of it that you want to avoid. If you do have time, you can look through some of the mods in Enderal My Way to see if there are any that you would like. The things you should consider using are quality of life mods, such as UI enhancements, and perhaps some texture replacers if you want to get rid of some vanilla Skyrim textures.

Enderal Forgotten Stories Special Edition is out now!
In that case, check out Enderal My Way. It's a ~400 mod modpack and it's very easy to install using Wabbajack. It all works perfectly with special edition and I highly recommend!
