You will need to pick a client that you can recommend to your friends and family, because they likely won't bother to look one up. If they are non-technical, then the client is what matters most for them and you need to decide what makes the most sense given their circumstances.
On the matrix side I can recommend Element (https://element.io/) which has a lot of eye candy. I'm not sure what to recommend for XMPP.
You also need to pick a server for them, because again, they won't bother to choose one themselves. If you can, host a XMPP or matrix server yourself!

Ask HN: User communities that aren't Discord?
If most of your audience doesn't use Discord, you're in a good spot. In the web dev world, so many projects use Discord that it's a massive benefit to just be in the server list with them. I felt my project had to use Discord.
It's been a while since I investigated solutions, but I really wanted Matrix to be viable at the time. I would check out https://element.io/ and see if it works for you.

I'm just happy they resisted the buyout by Microsoft.

Matrix is just a protocol. Clients competing with Discord would be things like Element. https://element.io/
It's no Discord (which itself is no WLM, by the way), but I sorely hope it or something open source gets there one day.

Multiple Russia-Aligned Threat Actors Actively Targeting Signal Messenger
I found SimpleX recently (https://simplex.chat/), which got my attention because it uses a unique account schema that doesn't have any individual account identifiers. It's got some interesting features. Not sure about user-friendliness since I don't use other messaging apps to know what to expect.
It's mostly just interesting to me that they did away with the username entirely and they instead have users connect exclusively through shared secrets like they're Diffie and Hellman.

Haskell: A Great Procedural Language

Their flake.nix indicates they use Haskell to generate cross compiled shared library for Android, iOS, Mac, Linux and Windows.
I am not expert in Nix but at high level I can see they are indeed using Haskell.
