tool like paperless -ngx just for (eventually scanning), indexing and retriving documents in the folders they are. Suggestions?
Have you looked at Docspell? It has an Android app. I ended up using paperless-ngx but considered Docspell too.

I don't know about their features but apart from Mayan and Paperless-NG there are also Docspell, Papermerge, Iodestone, Hermes and Teedy.

https://docspell.org/ less popular than paperless ngx and with less polished UI but better features for my use cases (folders, audio transcription, email imports )

Is anyone using Docspell (a paperless-ngx alternative) on Unraid?
Looks like I added this template repo: https://github.com/vakilando/unraid-docker-templates and used the images from the docspell docker hub (the templates without -v0.23 on them). I used bitnami/solr and postgresql:12.5-alpine for the other dependencies.
