It's foolish to think open source isn't possible on Android.
Call Recorder - SKVALEX is the module needed to record calls using the closed source call recording app.

Apps for recording and/or automating calls?
Hello Guy, to record your calls you can use this magisk module : https://github.com/Magisk-Modules-Repo/callrecorder-skvalex I use it for my business about 1 year, and he work like a charm ! For the automatisation, you can take a look to Tasker !

Not syncing on Android using Onedrive
I am now using SyncThing to sync between my phone and my PC. On Joplin, I have to install an older version of Joplin 2.5.5 from Joplin's Github. On Joplin, I choose "File System" and paste in the location where Joplin / SyncThing transfer the file in/out. It works great. Version 2.5.6 and later used a different Android SDK which needs to be revised in order to work with local files. Version 2.5.5 is the latest version that still works with local folder.

It's foolish to think open source isn't possible on Android.
Google Keep: This app is so basic that most open source note taking apps should suffice. As for the top editors, Joplin is good, can sync pretty well and even has error correction tools in case sync goes wrong, but you can't attach files bigger than 10 MB to notes. Neutrinote CE is almost just as good, it even has basic sketching feature but you can't attach anything other than images. Markor has terrible UX but it has good attachment support.

Best way to keep Android app updated without Google Play?
https://github.com/laurent22/joplin-android/tags There is a problem with the ordering on the repo. Check the tags instead of releases.
