Anyone know a music making program, supporting midi? Preferably open source of coarse
For quickly playing around I use Mamba which is a virtual keyboard with built-in fluidsynth support. So I don't have to start up all my different modular programs just to play a few notes with a piano sound. You can set your hardware MIDI controller to Mamba's MIDI in. It has very basic recording/looping but if you actually want to record and arrange tracks then use a DAW.

Where can I find resources (such as pseudocode) about how different guitar pedal and amplifier effects work?
This. Guitarix is the best open source guitar amplifier and the developer have done several guitar pedals too. Source code: https://sourceforge.net/p/guitarix/git/ci/master/tree/ Mirror: https://github.com/brummer10/guitarix Plugins (lots of guitar pedals): https://github.com/brummer10/GxPlugins.lv2
What are some alternatives?
When comparing Mamba and guitarix you can also consider the following projects:

rakarrack-plus - Rakarrack plus LV2s
libremidi - A modern C++ MIDI 1 / MIDI 2 real-time & file I/O library. Supports Windows, macOS, Linux and WebMIDI.
sfizz - SFZ parser and synth c++ library, providing a JACK standalone client
