[Video] FINALLY the perfect premium Linux experience
I've been running the same machine he has (ASUS Zephyrus G15) with Fedora 35 and KDE Plasma on Wayland, with all of the features you'd normally only get through Armory Crate in Windows. Things like GPU switching without a reboot, battery charge limits, keyboard backlight level/color control, and more. Throw in this tray widget for easily switching GPU's without using the CLI.

How to disable HDMI audio?
for sound options it will only list sources that exist, so plugging in a device - to a line out, to a headphones port, to an onboard hdmi - should add populated options to the sound settings tab. I'm a fan of - https://yktoo.com/en/software/sound-switcher-indicator/ - for a source selector from the desktop, and for pulse audio options for simultaneous output.

Finally made the switch to Linux, But what are some of your most helpful theme tips?
i found this sound switcher - https://yktoo.com/en/software/sound-switcher-indicator/ - very handy. I often switch between headphones and speakers, and using pavucontrol for outputting to both.
-
Is there a way to control volume per application like pavucontrol?
I was using indicator-sound-switcher to toggle my sinks. One nice thing about it is that it makes it simple to set hotkeys to toggle devices.

I find that I need to switch between different inputs quite often. Would this be something I could do in theme or would I need to dig into Cinnamon code?
I use sound switcher indicator

I found this tool, hope it's helpful.

Suggestion LM Cinnamon - audio switcher
The only thing close to what I need is this : https://yktoo.com/en/software/sound-switcher-indicator/ but with that I still can't see what output is selected.

indicator-sound-switcher is back in the AUR, and my first package is released :-)
You should check the dependencies. This source file for example imports gi and then uses that to load GTK libraries. The required packages for this to work should be in depends.
