apps that changed your life
I think Mealie, Planka, and AgenDAV (backend)/Sabre (frontend) would allow you to do all those things self-hosted, albeit not all in one place.

My slow progression towards and away from NextCloud
Thanks, this looks really amazing! I was looking at AgenDAV but Bloben looks much nicer. Then again, as long as I don't have a solution for email (web UI to access multiple accounts via imap) and contacts as well, just switching the calendar seems rather pointless.

I do not think this is currently possible since the Nextcloud web app doesn't suppirt sharing subscribed web calendars. See here: https://github.com/nextcloud/calendar/issues/5286

However, what you're describing seems like any simple Calendar will meet the needs (effectively, here's an event are you coming or not?). Might be overkill, but check out Nextcloud in that case (https://apps.nextcloud.com/apps/calendar).

Calendar service recommendation?
I have moved from Google calendar to NextCloud calendar self-host and quite happy with it. I use it with Apple Calendar for creating events, etc. Though sometimes it doesn't sync properly, most of the time, it does the job. The only downside is, I would like to connect my domain/email to the calendar but it is not possible with NextCloud, so it is quite inconvenient if someone tries to invite me.
