How do you guys image PC's before they go out the door?
Immy actually installs and keeps a lot of the more popular items from Ninite/Chocolatey up to date since the release of the 'Dynamic Version' feature where Immy reaches out to the vendor to get the latest version. This was inspired by https://github.com/aaronparker/evergreen and https://github.com/DanGough/Nevergreen

Is it possible to automate the creation of application packages?

Anybody using msptoolshed for PC deployments?
Finally, whatever you’ve uploaded to Intune will be stale as soon as an update happens to that package. Immy reaches out to the API to get the agent version that matches your instance of Automate, Control, N-Central, Ninja, Sophos, BitDefender, Printix, CloudRadial, HelpDesk Buttons, and many more. It does this also for many common line of business applications like Adobe, Bluebeam, Quickbooks, Zoom, Greenshot, 7zip, Snagit, Camtasia, I mean we add new ones daily I’m just rattling off the ones I can think of before my wife tells me to put my phone down. To be fair I have to give credit to the guys at Evergreen and Nevergreen for my inspiration. They are really doing the Lord’s work.

What are some alternatives?
Chocolatey - Chocolatey - the package manager for Windows
Intune-Apps - This script is used as software repository with a PowerShell-based framework. This creates and upload an IntuneWin file. Later I will also add MDT and SCCM support.
CMPackager - Creates ConfigMgr Applications using XML Recipe Files
Azure-Guide - Microsoft Azure Guide. Learn all about Microsoft Azure Tools, Services, and Certifications.
kbupdate - 🛡 KB Viewer, Saver, Installer and Uninstaller
CleanWin - WinRice is a tool that uses automation to setup your Windows devices. [Moved to: https://github.com/pratyakshm/WinRice]
Nevergreen - This module is an alternative to Evergreen, and allows you to find the latest version and download URL for various Windows apps. Evergreen uses API queries to obtain its data whereas this module is more focussed on web scraping. This is more prone to breaking when websites are changed, hence the name.
IntuneManagement - Copy, export, import, delete, document and compare policies and profiles in Intune and Azure with PowerShell script and WPF UI. Import ADMX files and registry settings with ADMX ingestion. View and edit PowerShell script.
PSAppMgmtTK - PowerShell App Management Toolkit
azure-gaming - Cloud Gaming Made Easy
posh-git - A PowerShell environment for Git
Autopilot-Manager - Autopilot Manager simplifies Windows Autopilot imports by using a small client program and an Azure app service.
