That said, in order to optimize your DPS you do want a couple of weapon-specific feats, such as Improved Critical + Mythic Improved Critical. So if you're on PC, consider the Weapon Focus Plus mod, which uses fighter weapon groups so you can take e.g. Improved Critical for Heavy Blades (longsword, scimitar, falchion, etc.) rather than a single sword type. I.e., your MC has taught themselves how to use any weapon, but they still have a forte.

Right behind them are VisualAdjustments2, BubbleTweak (mostly for the animation-speed tweaks), Weapon Focus Plus (especially for Shifter or any other natural-attack-focused build, makes them sooo much better when you only need one set of feats), and Enduring Rework (finally makes Enduring Spells useful on its own and not just a "feat tax" you pay on your way to Greater Enduring Spells). Add Combat Relief if you hate crusade management but don't want to set it to Auto; not using it myself but other Redditors said it still works.

Feyform Shifter + Trickster build suggestions
If you're on PC, I recommend the Weapon Focus Plus mod so you only need one set of feats to cover all your natural attacks. Much more reasonable than trying to take, like, a dozen crit feats to cover everything.

Any mods a first time player should use/download?
My second-tier mods are BubbleTweak and Weapon Focus Plus. You can play WotR without them but they're hella convenient for the speed tweaks and feat consolidation, respectively. In particular, WFP makes natural-attack-based classes/builds like Shifter a lot better because you only need one set of feats to cover all natural attacks, instead of one set for claws, one set for bites, etc.

BTW since you're already using mods, I recommend adding Weapon Focus Plus so that your weapon feats apply to weapon groups and not just individual weapons. I.e., I take the bardiche weapon feats while leveling, knowing they also apply to glaives so I can use them as well before Death's Consonant.

Your best 2H Weapon ?
Somewhat more balanced (though probably has an outsized effect on natural weapons) is this mod that has Weapon Focus apply to weapon groups.

Gold Dragon + Shifter?
GD form gets six natural attacks per round: one bite (2d8), two claws (2d6), two wing attacks (1d8), and one tail slap attack (2d6). If you don't want to have to deal with four different sets of feats, I'd recommend the Weapon Focus Plus mod.

What's the best 2H weapon for KC?
If you're on PC, I would recommend the Weapon Focus Plus mod which uses fighter Weapon Training groups for those feats.

Character creation is amazing except for designing my actual character’s appearance?
Visual Adjustments 2 is your friend here. Adds a menu to the pause screen that lets you construct your character from any asset in the game.

By any chance did you get Visual Adjustments instead of Visual Adjustments 2? The latter is working fine for me.

Beards transcend logic and reason they're all powerful bestowed via divine blessing. Heretic... or it's a bug lol if it bothers you that bad try visual adjustment2 https://github.com/BarleyFlour/VisualAdjustments2 super easy to use though pretty buggy itself at times never had an issue removing assets only editing colors/colours (for my geographically burdened brothers in Christ)

Cloaks/Capes are still buggy and glitch out if your character's race is Human and uses a Longsword
https://github.com/BarleyFlour/VisualAdjustments2 use this mod and remove cloaks from visibility. Without it, I can't play my s&b chars because it annoys be that much. Cheers!
