Does anyone know what happened with this? Does Minecraft's official VR version use OpenXR?
Just download on of the installers, vr or non vr here if it works the installer will automatically set everything up and you'll be able to select it as your minecraft version and launch from mc launcher.

She plays bedrock edition on her iPad. MacOS only supports Java edition. You need something like Geyser to play together or use software like Parallels to install windows on your Mac so you can play bedrock.
