Building Voron v0.1 with Voron 1.8 / 2.4 / Trident motors
You may want to try your luck by remixing the parts you want from a Tiny-M (https://github.com/gsl12/Tiny-M), a mod of the V0 that uses 2020 extrusions and NEMA 17 stepper motors.

Could a Voron v0.1 be extended to fit a larger buildplate?
yes. but probably not to 250mm. also you'll need larger extrusions. 1515 isn't stiff enough for that. https://github.com/gsl12/Tiny-M

v0.1 with nema17 motors?
If you want to build a V0 with NEMA17 stepper motors, you should take a look at the Tiny-M: https://github.com/gsl12/Tiny-M It's a printer based on the V0, but using 2020 extrusions instead of 1515, and NEMA17 motors instead of NEMA14.

Which one to build? V0.1, Tiny-m or Tiny-m 190?
Yes, he just started to publish the mod (https://github.com/gsl12/Tiny-M/tree/master/usermods/triple_z_belted/STL). I am still thinking about it for the 150 mod

But here's the github repo for a 150^3mm and there is a usermod for the 190. https://github.com/gsl12/Tiny-M

Would it be feasible to build a custom sized 0.1?
There is the Tiny M, basically a 150mm3 V0 using 2020 extrusions instead of 1515. The cantilever bed might start to be an issue going much larger than that.

Voron 0.1 - How frequent do folks need to re-level the bed when using different plastics?
Also, I hate to recommend a not voron based build but https://github.com/Annex-Engineering/Gasherbrum-K3 is my next printer. Small but has the volume you want, and is the fastest FDM printer I’ve seen. Not as user friendly to build as a voron from what I’ve seen playing with the idea. Not that I expect it to be a problem.

Annex K3 Beta - You've seen 25k accel and 300mm/s. Now magnetic docking probe and articulating nozzle brush.
Hey that's a nice printer. I had a look at https://github.com/Annex-Engineering/Gasherbrum-K3 It reminds me of a Voron crossed with a Hypercube.
