For Snow Leopard you should have a look at Soundflower. It's the OG tool for recording desktop audio output, and should still work on Snow Leopard (if the version linked doesn't work then you can try building the version from 2008 in the command line, it doesn't seem to be too complicated).

Subtitle is now open-source
Whisper already generates subtitles[0], supporting VTT and SRT so this is just a thin wrapper around that.
