zoom g3xn + Ableton midi detection
You can use this to send the relevant SysEx to get it into editor mode (`F0 xx xx xx 50 F7`). The three xx are the manufacturer ID, device ID and model ID. The github describes a slightly different pedal than you're using. You might have to quit the lab app, use MIDI-OX to monitor the pedal input, see if you can get it to send some data and figure out what those three bytes are in your case.

If you are sending MIDI from the PC you should have full control over the content of the MIDI message (velocity and much more). Here is one solution: SendMIDI, but they should come in all flavours.
