QSS-M
QSS-M, a port of ID Software's original Quake, evolved from Quake 1.09 to Fitzquake, Quakespasm, Quakespasm Spiked, and now Quakespasm Spiked Multiplayer. NetQuake competitive multiplayer clients began with ProQuake, progressed to Qrack or Mark V, and arrived at QSS-M, thanks to voluntary contributions (by timbergeron)

Is there any way to get rid of the 72 fps update rate in Quake Remastered?
If you're a programmer and still curious the source code is on github and the info for the "cl_engineHZ" patch is here: https://github.com/jpiolho/QuakePatches/blob/master/QuakePatches/Patches/settings_engineHZOverride.json

Are the multiplayer lobbys modded on console?
One thing to note is these mods are run from the PC version, with cross-play enabled. Enabling lobbies of more than 8 players (among other tweaks) requires patching the PC game executable. I don't believe the console versions are patchable as of yet.

QuakePatch: Quake Enhanced mod patching tool plus some mods I made
You can download the tool here along with the mods: QuakePatches Releases You need .NET Core 5.0 in order to run. Windows release only, but should be compilable for Linux / Mac. To install just extract the zip to a folder (or /rerelease) folder, then drag & drop the quake executable into it or alternatively if you extracted it in the /rerelease, just run it.
What are some alternatives?
When comparing QSS-M and QuakePatches you can also consider the following projects:
Quakespasm - unofficial mirror of QuakeSpasm SVN with branches for stuff I'm working on
rawaccel - kernel mode mouse accel
