Monitoring Software
Honestly, there are much better GUI's than what I wrote, but PSChiaPlotter powershell module has a plot manager. All instruction on download and use can be found here https://github.com/MrPig91/PSChiaPlotter. The module has been installed 30K+ across versions and all the code is open source. Besides a few quirks and bugs and being Windows only, it is decent enough.

Isn't mapping drives best way for mining on multiple machines?
You can use this tool https://github.com/MrPig91/PSChiaPlotter (Start-ChiaHarvesterWatcher) to confirm that you don't have any problems with lookup times.

What to do when official Pools are online? Delete all and replot?
A couple of plotting managers have a Replot feature which basically deletes the a plot once a new plot process is at the end of phase 3 or beginning of phase 4, so you are deleting plots minutes before new ones are made to replace them. The plotting manager I wrote PSChiaPlotter and another Ploto both have this feature. The other more popular plotting managers could have this feature as well, I just haven't checked.
