Restrict data to certain columns? Why can't I just turn off "show data point as table"???
You can define object-level security (OLS) to secure columns or tables in a similar manner to RLS. This will require using Tabular Editor (also [available as Tabular Editor 3, a commercially supported product) or some other external tool, as PBID does not yet support editing OLS.

Thing you wish you knew from the start
If you actually have 300+ measures in your model, you should really try using Tabular Editor to replace some of those measures with a Calculation Group.

Datasets vs. Dataflows
Look into using Perspectives to handle different views of the same single Golden dataset for different departments. You'll need to use Tabular Editor to create them, but you need to use it for so many other things too like applying best practices.

Best practice for 2 people to work on same power BI file?
Use Power BI Premium Per User if you can afford. This allows you to use the Tabular Editor tool . There some posts from Reddit users who aggressively support this approach for GIT controlling the "Dataset only PBIX". You work with the underlying model file directly.
