Any suggestions for a filament runout sensor for Ender 3 Pro w/ BTT SKR mini e3 v2 running Marlin 2.0.7.2?
Use this type of sensor and hook it up to the Raspberry rather than to the printer. It's much easier and there's no firmware flashing involved. Also, if you print from Octoprint you must connect it to the Raspberry anyway, otherwise Octoprint would not know when the filament runs out.

3D printed status beacon light for my 3D printer
It is fully 3d printed (except the LED strip, wires and some M3 screws). I used an LED strip with WS2812b individually adressable LEDs. The LEDs are powered by the same Raspberry Pi that hosts OctoPrint for my printer. Using the WS281x LED Status OctoPrint plugin, the LEDs can be easily controlled.

Running LEDs controlled through G-Code
You can control LEDs with WS281x Octoprint plugin and a Raspberry Pi with Octoprint. The board itself could probably control some MOSFETs that control a 5050 strip with PWM outputs, so you basically tell your printer you have more fans than you do, but that sounds jank as hell

WS2812b problem
I had the same problem and finally the Logic Level Converter caused it. I removed it and everything was fine. See also here: https://github.com/cp2004/OctoPrint-WS281x_LED_Status/issues/24

Python script to get WS281x LED strips to work with Klipper
I have thrown together a quick Python script to get ws281x LED strips to work with Klipper/Moonraker (https://github.com/11chrisadams11/Klipper-WS281x_LED_Status). I searched around for one, but I could not find anything. It is based off of the WS281x_LED_Status plugin for OctoPrint (https://github.com/cp2004/OctoPrint-WS281x_LED_Status).

Routing Temp Display to external?
Possible? Sure. I've got temperatures displayed as bar graphs on RGB LEDs during heating using an excellent plugin (https://plugins.octoprint.org/plugins/ws281x_led_status/).
