MaixPy
- Has anyone got python/micropython on RISC-V working?

IMAGE PROCESSING
I've never used these, but you might check out the Sipeed MAIX Bit. It is designed for "AI at the edge" applications. They have a version of micropython that runs on it.

Change the font size of text on a 1306 OLED - Using an Adafruit HUZZAH32 (ESP32) microcontroller
convert it to something usable for micropython. To do this, the author provides a python script (normal python, not micropython).

Any material, guides or tutorials out there for raspberry pi pico plus e-paper?
The writer.py defines the Writer class that can be used to render the fonts converted by the utility from point 1 to the screen, assuming its driver is derived from the framebuf class. If I'm not mistaken the driver provided by Waveshare should be usable with Writer out of the box, if not there are some workarounds for that, so it's not really a problem. Anyway, the writer.py should be saved on the Pico, along with the font, so they can both be imported in your program. Here's a direct link to the Writer readme: https://github.com/peterhinch/micropython-font-to-py/blob/master/writer/WRITER.md
