Hijack QMK output?
Sounds like you're trying to build a Stenogotchi
- This is a steno machine, used for recording words verbatim at speeds over 225 words per minute. Used in court rooms and legal depositions.

I hadn't heard of CharaCorder, looks interesting
If you're familiar with Plover, the Stenogotchi might be something you could look at as well, if the devices you're working with support bluetooth.

Can a Raspberry Pi easily emulate a bluetooth keyboard to control another device?
Yes. Check out https://github.com/Anodynous/stenogotchi

A row less traveled
I'm in the same boat, that's why I started working on the Stenogotchi.

Plover (rhymes with “hover”) is a free, open-source stenography engine
Check out stenogotchi [1] if you haven't already. Plover running on a battery-powered Rasperi Pi Zero.

making a bluetooth steno keyboard? Run plover on a raspberry pi and then send the text output over bluetooth?
Definitely. The raspberry pi zero w is particularly well suited for this due to its small size and built-in bluetooth. You can take a look at my hobby project with this same goal in mind, the Stenogotchi, for inspiration.
