How to I start speedrunning on Switch?
Once you get a capture card, you need a broadcasting software of some kind. Most people use OBS studio, which you can find here. There will likely be speedrunning tutorials out eventually, but because the game is so new, you’re kind of on your own for now in that regard. Also, if you haven’t speedrun any game before, you’re gonna want livesplit, which you can download here.

Does LiveSplit just suck in horizontal mode or am I genuinely doing something incorrectly?
LiveSplit is open source so if necessary you could make your own addition to enable word wrap. As far as how to do that, you'd have to ask someone smarter than me. There's definitely a ton of minor issues with LiveSplit that have made me think of downloading a different timer software, but they're minor enough that I haven't actually gone through with that.

i dont know how to clean with vi
I like to use LiveSplit for timing: https://livesplit.org/. That way I can do several practice clears without leaving practice tool. I also track my times on an Excel sheet since seeing my improvement over time is motivating.

Sounds puzzling. Do you know about the browser version of Livesplit? Maybe that would work better for you.

Do I need a visible timer for my runs to be valid?
If you download LiveSplit from the official site https://livesplit.org/ and get a zip folder (that you have to extract) there's absolutely no risk. You could also try https://one.livesplit.org/ (LiveSplit One) that doesn't even install anything on your computer, just runs entirely in a browser

Livesplit alternatives
Livesplit isn't a virus (https://twitter.com/wooferzfg/status/1300559588819902469?lang=en). However, it's a .exe, so you might not be able to run it on Mac products. You could use Livesplit One instead https://one.livesplit.org/. To get your Switch onto your computer, you'd need to get a capture card. I honestly don't know which ones work for Macs, so you'd need to do a bit of research.

Timer
...I guess one last thing is this program only works on PC, if you have a Mac (or chromebook or whatever) the timer selection is very sparse. Though you do have LiveSplit One that runs in a browser https://one.livesplit.org/
