Another minecraft server dev here, have you seen https://wiki.vg/Data_Generators? It lets you dump a bunch of data that i've found pretty useful. Other data extraction for me has mostly been done through a minecraft mod I wrote to add more data generators https://github.com/Rusty-Quartz/data-generator
