Are the following three assumptions correct about security?
Alternatively, you could take the probabilistic approach and assume that x number of hardware manufacturers are not in on a ploy to steal your money, which is the approach detailed in the Glacier protocol security guide: https://glacierprotocol.org/

Should I create a guide?
At this moment, most "non- reliant on a 3rd party" and secure way to do this is the Glacier Protocol (https://glacierprotocol.org) - but it is extremely complicated for most users and impractical for not large amounts of money (less than $100,000 equivalent)

Cold storage recommendation
Seedsigner is not the only option in this regards. Look into Krux. It does many things exactly like Seedsigner. And some more still better.

Question about generating valid mnemonic seed phrases on air-gapped devices
Seedsigner and Krux can do that. They're stateless and air-gapped. With krux you can store your seed heavily encrypted on a microSD, if you like.

Came to crypto because of altcoins, here to stay because of Bitcoin.
Coldcard is a solid, bitcoin only commercial option. If you don't mind a little DIY then Krux or seedsigner might be a good choice too. You can also make your own with an old laptop. Remove the WiFi functionality (rip out the board or antenna) and upload Linux. Install a wallet on there like electrum or sparrow (transfer it over via usb) and you have an airgapped wallet.

NEW: Binance's "Proof of Reserves" report has been deleted from the auditor's website. Take your Bitcoin off exchanges!
This is an interesting one I've been keeping an eye on., it uses a small developer platform as an alternative to a raspberry pi seed signer.
