Text stroke looking strange on some fonts
I'm afraid there's not much you can do about it. Some of these variable weight fonts are built with overlapping vectors. If you feel like falling down a rabbit hole of how and why, you can start here: https://github.com/googlefonts/fontbakery/issues/2999 but given it looks like yer trying to put something together before NYE, you might just wanna find a different typeface.
