The best way to test a typeface is to try it out yourself. The only stress tests that really make sense to apply to any typeface are the ones you would find in QA tools that typeface designers use, like Font Bakery.

Text stroke looking strange on some fonts
I'm afraid there's not much you can do about it. Some of these variable weight fonts are built with overlapping vectors. If you feel like falling down a rabbit hole of how and why, you can start here: https://github.com/googlefonts/fontbakery/issues/2999 but given it looks like yer trying to put something together before NYE, you might just wanna find a different typeface.
