How to Enable Crossplay on Minecraft Server: Bedrock and Java Edition
Floodgate is another plugin that you need to install on your server to enable crossplay. You can download it from their official website or from their GitHub page. There are different versions of Floodgate for different types of servers, such as Spigot, Paper, BungeeCord, Waterfall and more. Make sure you download the version that matches your server type.

Tailscale Authentication for Minecraft
Just wanted to point out that there's a pretty interesting project called Geyser[0] (along with a plugin called Floodgate[1]) that allows Java and Bedrock Minecraft users to connect to the same Java server. This might be an avenue the author could take to allow the tailscale auth here to work. In my implementation I'm using PaperMC[2] as well.

Bedrock Server for ARM
There isn't an official Bedrock server for ARM. One solution that might work is actually running a Java server. It's possible to run a Minecraft Java Edition server together with GeyserMC to allow Bedrock clients. GeyserMC is actually very simple to install, together with Floodgate. It seems to work very well and I'm not sure what are the downsides to using this.

Cross play on realms
Geyser supports both spigot and paper, and also supports BungeeCord/Waterfall and Velocity proxies. You can find how to set it up here. In order to use Geyser with mircosoft accounts, Floodgate is needed

I've grown out of the loop. What's the goto way to play the Java edition online with a self hosted server?
In terms of deploying the server I'd recommend https://github.com/itzg/docker-minecraft-bedrock-server, it's pretty much state of the art and uses Docker which is industry standard for deploying instances.

I found issue #289 of the docker image which appears to be a similar problem, although it might be an issue with the bedrock server itself, not the docker image.

Personally I just use this docker image, that checks the version and grabs the latest version available on their site, at every launch.

Bedrock Server for ARM
If using Docker, I highly recommend using this Minecraft server container by itzg, it's highly configurable and has ARM and ARM64 images in addition to the regular x86-64 (Note: itzg also has a Bedrock server container, but that one doesn't have images for ARM).
