Ripping my Looney Tunes Golden Collection toons for Plex. Considering these are dvds, is there any upside to going with HEVC over H.264?
Since you're talking about lots of files to process, I can recommend 2 other apps you might find handy: ShutterEncoder Shutter Encoder and FileFlows

1 month straight running Unmanic. I've saved more space than my Unraid server originally had.
You might want to check outFileFlows. It allows you to set your own parameters for automated file processing, including recoding audio & video, using a simple, flow-chart/process flow type gui.

Video encoder that allows for video pass through, but changes in the audioi tracks?
Handbrake was my go-to for years, but for the last 6 months or so I've used Shutter Encoder and FileFlows (both are free) for my encodes.

I'd like to encode my entire library to AV1. Software reccomendation?
For an actual workflow you can use my scripts if you want which will take remuxes and for the video it will encode to av1 and the audio keep a multichannel and also use that multichannel to downmix to stereo with drc ratio 4 and normalize the audio then finally encode it to aac via libfdk_aac -vbr 5. https://github.com/luigi311/FileFlows-Personal The docker image and a docker compose file is also there if you want to use them though based on the github action the docker image seems to be failing right now due to AUR issues in archlinux so you might need to tweak the dockerfile. You also arent allowed to distribute the docker image though if you went hunting and were savy enough to make some connections in the github actions there would be nothing stopping you from pulling the image from where i am publishing it to.
