Best immersion and quality-of-life mods for a first playthrough
I use EEUITweaks for this, specifically the "lefreut journal fixes [collapsed]" component. There are other UI mods that do similar things but this is the one I've used and liked.

Rules/gameplay-wise, BG1/2 is a fair bit more streamlined than later games. All you choose at level-up is weapon proficiencies, thief skills, and maybe spells, if applicable. as long as your stats are decent overall (I cheat and use an autoroller) you're basically set, and the rest comes down to gear and to spell selection. The only things that did give me some issues at first were low-level AD&D play (because wow do you die fast) and some of the more arcane aspects of AD&D in general. eg, the need for different tactical approaches due to enemy immunities, like clay golems needing an enchanted crushing weapon to damage. this was more because I am a dumbass who forgot the first lesson of AD&D, which is: don't go anywhere without a cleric and/or druid. (that and "save often.")

Not that I usually recommend changing mod configs midgame, but what happens if you install a banter accelerator (ie, this one)?

How to turn Baldur's Gate 1/2 into a dating sim (or, a list of entirely too many romance mods)
Banter: Banter pack and Extended Banter. The latter contains an optional timer that makes banters (dialogues between NPCs) occur more often (choose whichever timer you prefer).

What’s your favorite mod?
With Spellhold Studios down right now, I can't link the handy all-in-one forum page, but this is all of them, I think. The expanded banter pack is great as well. I like these a lot, they feel very true to the characters. Yoshimo's was probably my favorite because I like when games emotionally devastate me, but I've liked all the ones I've played (haven't finished Cernd's because, well, Cernd).

What are some alternatives?
BG1NPC - The BG1 NPC Project adds a great deal of content by expanding the depth of character and levels of interaction with the NPCs from the Baldur's Gate game. Requires Tutu, BGT, or BGEE.
Neera_Expansion - This mod adds a series of dialogues to the lovely elven wild mage Neera, in an effort to help flesh her out and give the game a little more content for those who've played through it a half-million times. For the romantically inclined, it also adds a number of flirts that you can initiate if you force-talk her.

A7-DlcMerger - This mod allows you to merge DLC archives into Enhanced Edition games.
JaheiraRecast - This mod reconnects Jaheira's SoD voiceover files to the dialog lines and gives Jaheira's soundset an SoD update like the other returning NPCs.
KorganFriendship - This mod adds a series of dialogues with Korgan.

Isra_NPC_BG2 - This mod adds Isra Ghadir, a cavalier paladin of Sune Firehair, to Baldur's Gate II. She is playable through to the end of Throne of Bhaal. You can find her in the Den of the Seven Vales in Waukeen's Promenade, where she is looking into some family concerns.
EET - Baldur's Gate: Enhanced Edition Trilogy (EET) is a modification for Baldur's Gate II: Enhanced Edition that merges whole saga into one game and provides continuity between the events of Baldur's Gate, Tales of the Sword Coast, Shadows of Amn, Throne of Bhaal and Siege of Dragonspear expansion (also for both Black Pits adventures). The name of this this modification probably rings a bell to those who have been following IE modding scene, thanks to the classic mod that inspired this project, called Baldur's Gate Trilogy (BGT), developed by Bardez and Ascension64. While EET remains mostly faithful to the premise of the BGT, it shouldn't be considered a direct continuation of that project. In fact both mods share little to no common code and took different design decisions in many aspects.
