you might be able to do it using Beat Saber Legacy, but if that doesn’t work then you can just wait for mods to be updated, which doesn’t take too long, probably a week or two

I just use beat saber legacy to launch beat saber, so I’ll always be able to load the version I want, regardless of steam updates.

i use bs legacy launcher (https://bslegacy.com/) and typically keep my version 1 or 2 behind the latest so i always have all my mods working

Beat Saber Legacy goes hard if you're ever stranded without mods

I downloaded an app called beat saber legacy launcher last night after this happened. It lets you run any version of beat saber since it was released so you can avoid having mods break with updates. It's pretty great, imo. The only downside, which isn't something I particularly care about, is that it won't update your scores on the leaderboards, but I'm fine with that if it means my mods continue to work without a hitch.
