What you can do to partially fix your problem is to enable the option to only update the game when you launch it in steam settings. Then when you see the update button, you navigate to your beat saber folder and rename it to something like 'beat saber good'. After that when you hit update it'll just completely download the newest version of the game in a newly created beat saber folder. Then you just rename the new one to 'beat saber new' and the one you want to play to 'beat saber'. After that when launching the game it'll just run like it did before hitting update. For now if you haven't done this you can check out https://bslegacy.com/ (i think, please check) and download the old version. I think they also have a tutorial on how to downgrade your updated beat saber folder.
