Lately I’ve become a big fan of Harvard’s CS50X (the OpenCourseware version, no one should ever pay EdX for a “verified” certificate, whatever that is)… it’s got a subreddit as well where people taking the class at their own speed congregate.

Honestly, I would recommend This. They start with Scratch, do C for most of the course, then explore some additional languages at the end. Best intro CS course I’ve ever seen, completely free, taught at Harvard.

This sounds the best way forward - learn some LaTeX, learn some macros/substitution commands in either your voice software or in an intermediate program like Autohotkey, maybe get someone to help get this functionality setup correctly at the start. This seems like the most practical approach to working independently.
