Is there still a way to develop mods for 1.12.2?
Have fun. If you'd like some tutorials, I highly recommend shadowfacts' 1.12 tutorials and the Botania source code, and have heard good things about mcjty's wiki.

Botania Orechid doesn't use forge ores tag (1.19.2)
Orechid entries are specified using recipe files https://github.com/VazkiiMods/Botania/tree/1.19.x/Xplat/src/generated/resources/data/botania/recipes/orechid where you also include the weight

I would like to attempt making a mod
The two main ways I know of are "Multiloader-Template style" and "using Architectury-Loom". Archloom is a big Gradle plugin that tries to do everything for you, multiloader-template is less of a software package and more of a code style. I'm not familiar with archloom but i've written a bunch of mods with the multiloader-template style.
What are some alternatives?
