Are crypto wallets' seeds (private keys) really SAFE?
You can't really. That's why using open source software is so important. Or do things fully offline by hand to be sure: https://github.com/veebch/Bip39-Dice

Hey new to monero community. Is this OK for cold storage?
You can make a wallet by rolling dice actually (or any other non-digital source of randomness). Here are some instructions: https://github.com/veebch/Bip39-Dice

Self-generated seedphrase.
Much easier, you don't have to try so many words, maximum 16 words. It's described here: https://github.com/taelfrinn/Bip39-diceware

Scammed
I think it's best to create your own seed phrase, but the last word has to meet the checksum requirements ane I couldn't get it to work. Here is a tutorial but it didn't work for me - I might try again if I have the time: https://github.com/taelfrinn/Bip39-diceware

Paranoid Security question
If there's concern about the RNG, you can [manually generate a key using dice](https://github.com/taelfrinn/Bip39-diceware). Real randomness! Call me paranoid, but IMO it's worth the extra 30 minutes or whatever. One less thing to trust.
