Use betterjoy it even has motion control support and it works pretty good.

I want Skyward Sword to be released on the Switch for exactly this reason.
Actually, it appears possible to use Switch controllers with Dolphin using this[1]. I may have to set this up in the near future.

Using Switch Pro controller with Epic Games + DLC
I use BetterJoy when playing non-Steam games that don't natively support the Switch Pro controller. Works on other EGS games like Kingdom Hearts 3 and Hitman 3, so it might work with Outer Wilds too.

to add to this, if you have a bluetooth adapter and have a switch pro controller, you can also use gyro by using a program called Betterjoy.

Or... You can use https://github.com/Ryochan7/DS4Windows for Sony and https://github.com/Davidobot/BetterJoy for Nintendo and https://github.com/parsec-cloud to do the very same thing without piggybacking on Steam at all, provided that it's also same to convince your friends to use your apps or my apps.
