Using Switch Pro controller with Epic Games + DLC
I use BetterJoy when playing non-Steam games that don't natively support the Switch Pro controller. Works on other EGS games like Kingdom Hearts 3 and Hitman 3, so it might work with Outer Wilds too.

How do controls work when emulating switch games like BOTW or TOTK?
to add to this, if you have a bluetooth adapter and have a switch pro controller, you can also use gyro by using a program called Betterjoy.

You can use https://github.com/Ryochan7/DS4Windows for Sony and https://github.com/Davidobot/BetterJoy for Nintendo and https://github.com/parsec-cloud to do the very same thing without piggybacking on Steam at all, provided that it's also same to convince your friends to use your apps or my apps.

I been doin this a couple years now. I bluetooth the left one only and map it with JoyShockMapper. Like Steam HUD it has a lot of features using gyro, double tap binds and chorded binds.

VR quality gyro aim with NO software, NO cameras, just plug and play with one wireless dongle. Tested reliable for more than a year with NO drift.
Thankfully, Jibb already redirects the newer fork if you look at the Release page or literally the first Paragraph of README.md. So unlike DS4Windows (which took 6-7+ years to tell folks to move over to Ryochan4 fork...which said fork been discontinued and someone else took over. Welcome to FOSS. 😋), it should be easy enough to head over to Electronicks fork.

DS4 Gyro on MAME?
I don't have any experience with it, but have you tried JoyShockMapper?

Who here has tried Gyro aiming? If so, what's your experience?
These days I just use the setup in ds4windows as it's easier to use with non steam games. JibbSmart's Joyshockmapper is intresting. Particularly his flick stick implentation. Steam added this later but I couldn't get it to work the same in steam when I tried it. I tend to use a controller when I'm in a low effort mood though so I haven't messed around with it in a while. If you are intrested in using gyro you should give his channel a look he's got some great ideas.

Anyone know how to fully optimize TF2's controls for Xbox One controller?
If you can't figure out how to configure the controller in Steam, browse the top community configurations for TF2 and the controller. It's probable that someone has already figured it out and shared the result. If you want to configure it in a way which isn't possible in Steam, you can use other software like JoyShockMapper or DS4Windows.
