How do I rip bluray/dvd’s/ps2 games? And what is the recommended storage product and size to use?
I can recommend https://github.com/saramibreak/DiscImageCreator . It handles all kinds of weird formats and copy protections, and it's open source! You can use https://github.com/SabreTools/MPF as the frontend if you like.

Archiving DVD's
DiscImageCreator for making a complete backup (if drive is supported, otherwise use Alcohol 120%), and MakeMKV for ripping the video files from the DVD or ISO image. WinCDEmu is useful for mounting and as an alternative for creating an ISO image.

Imaging CDs with copy protection?
Aaru and DiscImageCreator are the best tools available for proper preservation of weird copy protected discs. They may or may not support your drive properly, though.

Looking for a Win10, command line Optical media CD/DVD imaging utility (to help my robot).
Why not use DiscImageCreator? It's command line, open source, has among the best handling of copy protected discs (especially game discs), and also collects a bunch of other data about the disc that can potentially be useful for archival purposes (subchannel data, pressing offset information, etc.).

Ripping isos from a scratched dvd
Try DiscImageCreator. It's a command line tool with lots of options including how many read retries to do, etc. There's also a GUI called MPF (Media Preservation Frontend) available.
