My personal preferences are StepP1 (particularly the 1.0.3 community mod) and Project OutFox with Infinitesimal. Both have the widest range of support with simfiles that have been around for a long time as they support/continue the common "StepF2" simfile standard.

Support for the EZ Flash Omega is still in the works.
The code uses elm-chan's FatFs (a small FAT32 library) to find the right sectors, and then DMAs each uncompressed video frame directly into VRAM, enabling 60FPS video playback efficiently. With the 32MiB ROM size limit no longer being an issue, I opted to not compress the videos at all, which allowed to also run other things in the game loop like GSM audio decoding, the chart-reading routines or the wireless adapter multiplayer code.

You can even use Stepmania song manager to keep up to date with the arcade releases. Easily the most useful thing that has kept me up to date with the ddr releases
