Online there are many tutorials on how to harden a VPS, including a interactive script. The main thing you have to take care of is to disable password login (only ssh key login) and setup firewall with geo caching to only allow requests from the countries you want.

Maybe check out Vultr and get a free trial there. They have server locations in EU member countries. Also they have one click deployments for Wordpress+litespeed so you can deploy in just a few minutes with everything configured for you including your SSL certificates. If you’re hosting multiple websites on the same server, then you can deploy CyberPanel which does the same job but for several websites via the web dashboard. DigitalOcean and Linode have the same I think. Once you’re logged in, just install woocommerce, and lscache plugin and configure both. Just make sure you do some research on best security practices for an Ubuntu server (some good resources here. Research Wordpress security too. Use a good backup system such as a whole server backup from Vultr, only adds a couple of dollars to the monthly cost of the server. A $5 server running litespeed can handle quite a significant amount of traffic on multiple websites. You can use a free Wordpress backup plugin, and on top of that you can configure Vultr to do an entire server backup on a routine basis.
