Removing nether travel
If you're on 1.16 or above you can do it with a data pack, the directory you would need is data\minecraft\dimension_type\the_nether.json and change "coordinate_scale" from 8 to 1. You can grab the needed files for the data pack from like mcassets or SlicedLime's example pack that contains the vanilla world gen.

i listed all the vanilla ores that use it. only diamond and ancient debris, and then the random buried coal, lapis and gold. the standard coal, lapis, and gold dont use them. If thats all you want to be affected, it should be pretty easy to remove those via datapack files. see examples in https://github.com/slicedlime/examples/blob/master/vanilla_worldgen.zip under worldgen\configured_feature\

Change the spawning weight for them to zero in any biomes that you don't want them to spawn in. The biome jsons are in data\minecraft\worldgen\biome. See the vanilla world gen files.

customising the world generation is fairly complex, but there's documentation on the wiki and you can get the vanilla worldgen files to modify from here. the main thing you'll need to do is remove the carvers and features from the biomes.
