I've been using Postal Server for 2 years ( https://docs.postalserver.io/ ) sending around 50k emails / day without any issue.
Just make sure you set up everything (SPF, DKIM, DMARC) correctly, including the PTR reverse lookup of your server ( really important ).
Key tip: warm up your ip(s). I use mailreach.co ( it has a USD 25/m cost ), reached near 100% deliverability in a month.
I now have barely have any maintenance to do. It just works.

Getting very confused by Postal install, it does not seem to be "the Docker way"
Unfortunately from there nothing made sense to me. Having docker and docker-compose installed, sure but also `git curl jq` is weird. Why would I need tools on the host? Then the documentation shared no `docker-compose.yml` file despite multiple `docker run` examples. Instead it asks to run a `postal` command installed on the host. I was so lost I opened an issue https://github.com/postalserver/docs/issues/18 which then pointed to https://github.com/postalserver/install/blob/main/templates/docker-compose.yml a file where every service use `network_mode: host`.
