A node is a computer that runs 'Bitcoin Core' software. The awesomeness about Bitcoin is anybody can run their own node. You just need a computer with ~350 GB free disk space (as of March 2021 since the blockchain is constantly growing) to store the bitcoin blockchain and few GigaBytes of bandwidth every month (excluding the bandwidth required for IBD (Initial Block Download))

No, these are just more user friendly wallets called litewallets. If you wanted to be self-sovereign you could run the Bitcoin Core (Qt wallet). The downside of this is that you need to download and maintain your own copy of the blockchain. It's manageable on desktop but not on mobile since you need about 50gb. Also whenever you open the wallet, before you can do anything, you need to sync up the blockchain for any new data since the last time you had it open. This is why they call the more popular wallets litewallets (light wallet) since you don't need to deal with downloading the blockchain. What happens with the litewallet is you just pull only the latest data and any data relevant to your wallet like your balance and transactions history
