Some newbie questions
Yes. I would recommendMonk's Common Display for doing just that. Make sure the account have ownership of all the player tokens. There are several options in the module. You can cycle through the tokens so that vision display according to selected token. Experiment with the modes using the player account from question 2.

Using FoundryVTT in place of Arkenforge for an in-person TV Tabletop
As far as I know some of the things he mentioned are implemented in Monks Common Display. Check BailyWiki's video on it. It can be pretty great if you have another computer(or browser) that can run a screen and allows you to be both a DM and a common display that can track players.

That's how to track the "what computer does what bit" - as far as "how do I use foundry to facilitate in-person play," here are a couple options: There are ways to get fancy with shared screen etc if you want to use the VTT in full, like show a battlemap and everything - I know less about this case so I won't discuss it in too much detail, but this module appears to be built to cover this case.
