Open source alternative to Postman / Insomnia
I've run the open source version of Insomnia (https://github.com/ArchGPT/insomnium) for a while, but as that project is no longer actively maintained, I may give this a look.

Insomnium (offline-only fork of Insomnia) is dead
There no longer seems to be a Postman alternative works 100% offline, the way a local testing tool should behave.
